This locally grown feast matches regionally renowned chefs with
food grown on Montana’s sustainably managed farms and ranches.
The dinner is formatted as a “sustainable tasting.” Diners
will move from tasting station to tasting station sampling appetizers,
entrées and dessert featuring Montana meats, grains, vegetables
and fruits. Entrées stations will showcase both natural
and grass-fed beef, chicken, fish, pork and vegetarian cuisine
with side dishes using a wide array of grains and fall root vegetables.
Each table will receive a dessert sampler plate showcasing Montana
fruits and dairy products.
All the chefs participating in the dinner support local producers and will use their culinary skills to create dishes designed to highlight the best characteristics of each food. Click here for the list of participating chefs of the 2007 Dinner.
The Harvest Celebration is an integral part of CNR’s Market
Connection Program to open lucrative markets for sustainable producers
as a reward for outstanding stewardship.
The Harvest dinner also serves as CNR’s major fundraiser
to support our work to promote sustainable choices and land stewardship
throughout the region. There will be silent auction and a brief
live auction during the evening.
